Meat quality linked to biodiverse pasture, finds study

Researchers at the University of Exeter in the UK found that animals raised on a biodiverse pastured produced better-tasting, higher-quality meat that contained higher levels of certain antioxidants.  Much of the difference can be attributed to the reactions of certain plant species as they are digested in the rumen.
