Meat integrators need to be accountable for the safety of the food they market
Safe handling of meat and produce by retailers, food handlers and the public is important, but the food coming to them from the industrialized food system needs to be safe—and current government mismanagement of its oversight role means that too often, the food has problems tied to its production processing that no one is being held accountable for. Ellen Silbergeld, a professor of environmental health sciences at the Johns Hopkins University, says the rickety outbreak-reaction system used after food outbreaks needs to be replaced with a much more rigorous effort to actually create healthy food from healthy animals in ecologically sound production systems.
